- Roast Level 06: Deep
Developed with intention and balance, this deep roast delivers a layered profile centered around rich notes of molasses, bittersweet dark chocolate, and toasted walnut. Deep caramelized sweetness leads the cup, reminiscent of syrupy molasses, while the dark chocolate adds depth and a smooth cocoa finish. Impact reflects our belief that coffee should create tangible outcomes for the people who produce it. This is shown in our intentionality of where we’ve made deliberate purchasing decisions to contribute more directly to quality, sustainability, and long-term viability at origin.
For us, this looks like paying higher premiums, working with partners who prioritize transparency, and our 10% financial giveback into sustainable development projects in various coffee producing communities. This way, we get to participate in a system that rewards care, effort, and progress. All of this is more than just about good coffee; it’s knowing the farmers by name, telling their stories, and aiding in the economical advancement for their families and communities. This is what coffee should be. In the roaster, we develop this coffee to a deeper profile that brings forward richness and intensity while preserving the integrity of the coffee itself. The result is a cup that reflects not only depth of roast, but the outcome of intentional choices made throughout the supply chain.
The Cooperativa Agraria Cafetalera ACPC Pichanaki was founded in 2000 as the Central Association of Pichanaki Coffee Producers, bringing together 39 local associations with the shared mission of improving quality, gaining market access, and raising the standard of living for farming families. In 2015, it formally adopted its current name, reflecting its growth and stronger organizational structure.
From the beginning, the cooperative has focused on empowering producers through training, technical assistance, and the implementation of best practices in post-harvest processing, selection, drying, and storage. By investing in organic certification, fair trade practices, and sustainable farming, ACPC Pichanaki has positioned its members to access specialty coffee markets in the United States and Europe.
Today, the cooperative unites 320 partners, cultivating more than 2,065 hectares of coffee, with over 1,400 hectares certified organic. It upholds a strong commitment to social responsibility, ensuring equal opportunities for young people, women, and indigenous communities. The cooperative also proudly carries the Free of Forced and Child Labor seal, reinforcing its dedication to ethical production.
Through strategic alliances with both public and private institutions, ACPC Pichanaki continues to strengthen economies of scale, optimize resources, and open doors for smallholder farmers to thrive in the global specialty coffee industry.
